Key Lime Pie is my hubby's favorite. I searched for the right recipe and finally found this one. It is smooth, sweet and just the right amount of tart. I love making it for him, just to see his eyes light up while I whip fresh cream to top it with.
He is a good provider and a wonderful helpmate. I often think of ways to show my appreciation and,so far, this is his favorite way for me to do it!

Key Lime Pie
2 eggs
1 egg yolk
1 can (14oz) sweetened condensed milk
1/2 cup fresh or bottled key lime juice or lime juice
2 Tablespoons water
1-2 drops green food coloring (optional)
1 tsp grated lime peel
1 graham cracker pie crust
1 cup heavy whipping cream
2 Tablespoons sugar
1/2 tsp vanilla
Key lime slices oe lime slices for garnish
in a large bowl, beat eggs and yolk with wire whisk until combined. Gradually add milk, beating until combined. Add lime juice,water,food coloring (if using),and lime peel. Whisk until well mixed. Pour into crust and place on baking sheet. Bake at 350 degrees for 20 minutes or until almost set in center. Cool on wire rack for 1 hour. Refrigerate at least 4 hours. Chill mixing bowl and beaters of electric mixer in freezer* In chilled bowl beat cream, sugar and vanilla until stiff peaks form. Top pie and garnish with lime slices.
*the cream will whip faster in chilled bowl

Another wonderful recipe which I shall take down and use in the very near future. My hubby is a "dessert first" kind of guy and would love this!
I have wanted to try to make this for a long time. Perhaps this will light my fire. I can't find lime here, but do you think lemon would be good. When I go to America this May I should try to bring some back. My list is getting longer.

Key lime pie is so light and filling that I could eat it at every meal.
