Pineapple Chicken

This was a new recipe and I have to say we were very pleased! Hubby likes pineapple and so do the kids. The water chestnuts were an added bonus in hubby's opinion.

Pineapple Chicken

1/2 cup barbecue sauce
1/2 cup orange juice
1/4 cup packed brown sugar
2 Tablespoons vegetable oil
2 tablespoons all-purpose flour
1/4 teaspoon salt, optional
4 cups cubed, cooked chicken
2 cans (5 1/2 oz each) pineapple chunks, drained
1 can (8oz) sliced water chestnuts, drained
1 1/2 teaspoons ground ginger
Hot cooked rice
In a large sauce pan, combine the first six ingredients until smooth. Bring to a boil, reduce heat and simmer for 2 minutes, stirring occasionally. Add the chicken, pineapple, water chestnuts and ginger, cover and simmer for 10 minutes. Serve over hot cooked rice.
TASTY!!

This looks so delicious. I am going to copy and try it. My husband doesn't much like sweet and sour, but I think he will like this. I think my sons will love it. Plain chicken for Myriam, as usual. I bet if she tries it she will like it, so I am going to ask her to take one taste (right at the end so she is getting curious).
What lucky you were able to have the Easter egg hunt. Sunny days don't always come when you want them.
