Lemon-Thyme Bread





Ok, I made the bread and it is a toss up between savory and sweet. I will lean more towards sweet but it would compliment a meal, especially a pork dish. I think so anyway. Let me know if you try it and what you think! The recipe calls for a sweet glaze made with confectioners' sugar and lemon juice, but I did not add this. I like it just as it is. I got the recipe from Tasteofhome.com.

Lemon-Thyme Bread
1 loaf
Taste of Home

3/4 cup milk
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 cup butter, softened
1 cup sugar
2 eggs
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon lemon juice
1 tablespoon grated lemon peel
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon lemon juice
In a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high for 1-2 minutes or until bubbly; cover and let stand for 5 minutes. Cool to room temperature. In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with reserved milk mixture. Stir in lemon juice and peel. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. In a small bowl, combine glaze ingredients until smooth; drizzle over bread

The bread looks great. I love Taste of Home and have gone to one of their cooking schools. I'll have to try the recipe.

I think I'll live, virus-wise. It's back to work tomorrow, no matter what!

PS--I'm forwarding your recipe to my mom who is probably more likely to actually make it in the foreseeable future since I'm working and she's retired! I'll let you know how it turns out.

One of my favorite T of H recipes is an asparagus casserole. Not very lo-cal, though, but thoroughly delicious.

I love the flavours you have used in the bread. Plus its duel purposed - can be used for sweet and savoury :)
