I usually use boneless chicken thighs. I also get a little spice happy with this dish. Extra lemon juice, some thyme, allspice, and cayenne pepper were thrown in tonight. Yummy, yummy! I serve it with steamed rice (that has hint of lemon juice, salt and pepper) and broccoli.
