At least once in the summer, there comes a day that is unseasonably cool and overcast.
These are my favorite days. My dream place to live (one of many) is Seattle. With the rain falling 9 months out of the year, I would be in heaven! Weird? Probably....
Anyway, when we have a cooler day I enjoy making Zippy Beef Tips. You can make them in a slow cooker as well. I like to cook mine slow for 4 hours...so tender, so yummy!
Zippy Beef Tips
1 1/2 to 2 pounds beef tips cut into thin pieces (I just use stew meat)
1 cup 7-UP
1 can cream of mushroom soup
1 pkg lipton Beefy Onion dry soup
Place beeftips in a greased 2 quart casserole dish. Spread soup over the meat and sprinkle with dry soup. Don't stir! Pour 7-UP over all and cover. Bake at 275 for 4 hours. Serve over hot cooked white rice. (or egg noodles)

I lived for 12 years in Portland, OR and still suffer from seasonal affective disorder from the lack of sunlight. Ick.
